Weeknight dinner: slow cooker bbq chicken
The husband and I have been on a pulled pork and pulled chicken kick lately! We are loving our slow cooker and how it is just so amazing to come home to a delicious meal that is basically ready without any effort on our part.
The husband wanted to try a sweeter version of the pulled pork recipe that we had been using to prepare the pulled chicken, so I found a recipe on the fantastic The Kitchn website (see recipe here) to try.
What we wanted to do differently than before was to use bottled bbq sauce to flavour the chicken instead of a mix of herbs and spices and other liquids (like tomato sauce and chicken broth) to create a bbq sauce. This recipe by The Kitchn calls for bbq sauce (homemade or store bought), so we took the opportunity to try something kind of fun and use our Sweet Baby Ray’s Cola-Q bbq sauce. It turned out fantastic, and the level of sweetness was just what the husband was looking for. We will definitely make this again!
